Amazing is the first word I hear when people tell me how this recipe came out.


The healthy part comes from many of the ingredients. Tigernut flour is a pre-biotic, which feeds the good bacteria in your tummy. It is high in protein, as well as high in iron, zinc, potassium, magnesium and vitamins C & E.

Instructions

  • Preheat oven to 375 degrees F

  • In a medium mixing bowl, combine apples, lemon juice, coconut milk, maple syrup, coconut sugar, and allspice.

  • In a small mixing bowl, combine all the ingredients for the crumble topping. Mix with your hands until mixture is crubly, If too dry, add a little more coconut oil.

  • Grease an 8" x 8" baking dish or pie pan

  • Pour the apple mixture into the pan

  • Evenly sprinkle the crumble topping over the apples

  • Bake for about 20-25 minutes, or until apples are tender.

  • Serve warm and enjoy!
